I was craving something super chocolaty that would fit the last of my macros for the night that would be super sweet and super filling. I made Chocolate Zucchini Pancakes and as them without topping it with anything though if I had a few more calories it would of been amazing with some whipped cream or ice cream. This was super sweet and was super chocolate flavor that made me feel like i was eat devils food cake but in pancake form. I am in love with this and plan on making this again.
Macros for 2 medium-large pancakes: 247cal 18C 4F 36P 6fiber
151g grated zucchini
.25tsp baking powder
.25tsp baking soda
5g Hershey’s baking cocoa
35g Chocolate protein powder
1 vial liquid stevia (optional)
2 large egg whites
6g flour of choice (i used oat flour)
18g mini nestle chocolate chips
Mix all ingredients except the chocolate chips together thoroughly. Then add in the chips right before you start to make these like regular pancakes. They do bubble a little bit like normal pancake mix but still check on it regularly since it will not have a dried appearance.
