Time for Pancake fun time! Project Zucchini Pancakes! oh yeah!!
Today i decided i was going to have a zucchini party with my pancakes and i wanted to share the result with you.
High Protein Zucchini Pancake Base Recipe
Macros for 2 large pancakes: 265cal 3F 15C 47P 5fiber
4 large egg whites
83g finely shredded zucchini
10g oat flour/pancake mix
36g protein powder of choice
.5tsp baking powder
Mix all together, the batter will be slightly green and slightly watery which is fine. Cook like you normally make pancakes, it will turn out the same.
I turned mine into peanut butter protein powder and mixed in strawberries into the batter. Afterwards i made a large PB&J pancake sandwich. The end result i normal looking pancakes with little specs of green throughout them, they will by very moist 🙂 The pancakes take on the flavor of the protein powder that you use and are more filling, you cannot taste the zucchini at all. So it is a great way to sneak in veggies! yay! (sorry inside pic is blurry)
