Chocolate Protein Pumpkin Zucchini Muffins

Original recipe came from KimbosBreakfast  I changed it to be chocolate and have less fat.

Ingredients:
135g oat flour
84g protein powder I used myprotein
20g Hershey cocoa
1 tsp baking soda
1/4 tsp Xathan gum
63g truvia baking blend
1 tsp vanilla
1 egg
4 egg whites
122g pumpkin
1 large zucchini (256g)(finely shredded)

Nestle Mini Chocolate Chips  32.3 g
Macadamia Nuts, Unsalted  29.8 g

Directions:
Preheat oven to 355 degrees and spray muffin pan with non-stick cooking spray.
Combine dry ingredients in large bowl (not sweetener).
Combine pumpkin, eggs, egg whites, vanilla, truvia, and zucchini in another bowl.
Add dry ingredients to wet ingredients and mix until well combined.
Poor into sprayed muffin pan.
Bake for approximately 23 minutes or until toothpick comes out clear and lightly brown.
Makes 20 muffins
Nutrition Information (per muffin):  78.2 calories, 2.4g fat, 10.1carb, 5.7g protein 1.6fiber

I finely grated mine so i could barley guess that there was zucchini in them, they were a little grainy but that was because i over blended the macadamia nuts.  Other than that these came out wonderfully!!

So feedback from feeding the office.. with just the offer of a chocolate muffin/cupcake everyone happily dug right in, i asked for feedback and they all said that it tasted amazing! woot for healthy food tasting oh so naughty! *happy dance*
